Thyme Bar

We have been to Patisserie Chanson a few times, and to the Dessert Bar (CLOSED) below a few years ago. The space that used to be occupied by the Dessert Bar is now a hidden, a cocktail speakeasy lounge! While my family was here, I decided to take them there. There was a somewhat not-noticeable sigh next to Patisserie Chanson, but we had to go inside the Patisserie Chanson in order to go down to the Thyme Bar.

The inside was beautiful, quite different from how it used to be before, when they were Dessert Bar. Reservation is only for their Tasting Menu, otherwise, you can do walk-in. Since we wanted to try their Tasting Menu, we made reservation for us. Be aware that you have to prepay for the tasting menu.

Thyme Bar Tasting Menu ($90/person) consists of 5 courses; La Perle (Amuse-bouche), 2 Cocktails of your choice, 1 Savory course Item, and 1 Dessert. The amuse-bouche was really pretty! It was a kind of a shot of cocktail in a oyster-shell-shaped-cup. It had a jelly-like orange round ball, like a pearl in the shell. What is a great and beautiful way to start the tasty evening filled with cocktails!

Since there were four of us, we got total of eight cocktails. And they all sounded very interesting and innovative. The first one was Agrabah, Vodka based, with Moroccan Mint, Pistachio, Orange Blossom Water. It came in a magic lamp! SOOOO cool!!! It was quite magical with white smoke-ish streaming out of the lamp. I asked our lovely server if the Genie comes with the lamp, and she said the lamp was unoccupied…he must have went on a vacation, or already freed before I could? The cup was also very artistic, fitting the lamp. There were more than enough for two cups worth cocktail. And, it tasted really good too. A hint of nutty flavor from the pistachio, and refreshing mint.

All the other cocktails of our first choice was as wonderful, beautiful, and tasty as the Agrabah. We had the Abstract Mandarin, the Cloud 9, and the White Lady. Just look at how they were brought to us! The Abstract Mandarin is a Gin base, with Mandarin, Earl Grey Team and Coriander. If you thought “that sounds fantastic!” it sure was! Very fitting to speakeasy, although it is not served in a teacup, it is like a spiced tea with notes of orange. So good! The Cloud 9, vodka based with Passion Fruit, French Vanilla, and Dijion Mustard. It came with a fluffy cloud of cotton candy on top! How fun is that! I didn’t get any mustard flavor, but I am sure it is the secret ingredients to enhance the sweetness. The White Lady, Gin based, with Raspberry, Thyme, Orange, and Eucalyptus. The cocktail came in the said white lady. Impressive presentation as all others. It had more flavors of the herb, with the sweetness of the raspberry. Needless to say, we all enjoyed our first cocktail.

Before going into our second cocktails, let’s talk about food. We each chose something different so that we could all share and try them all. The first one was Charcuterie, with some baguette to dip. It was all fresh, nice assortment of charcuterie meats, and very satisfying.

The second, something that I just cannot stop myself from ordering, Truffle Fries! It comes with Black Truffle Aioli, and Parmesan Cheese. It was as good as I had hoped. And then the black truffle aioli brought it to the next level! It was so addictive and delicious!

Then the Sliders, with Beef, Bacon, Comte Cheese, Gem Lettuce, 1000 Island Sauce, Pickles, and Brioche Bun. If I remember correctly, this order comes with three sliders, but our server made sure we get four of them so that we each can have one. Thak you! It was meaty and juicy, with fresh lettuce, and nice crunch form the pickles. The sauce made each bite even more delightful.

The last but not least, Crispy Chicken, with Butter Swiss Chards, Spinach, and Habanero Sauce. The chicken sure was spicy! It had a nice crunch to it, and the greens underneath brought down the heat a bit. It was really good, if you are a fan of spicy food.

For my second cocktail, I chose something based on what I believe it would look like, I mean, lots of people do that, right? LOL. And just as I thought, it was a lovely little bubble bath! It was Les Bains Douches, Gin based, with Alpine Flora, Green Apple, Pine, and Anise. So adorable and so fun to drink! I liked the green apple, and the anise went great with it.

Others also had pretty and interesting cocktails. The Noir and Dell-Iris. The Noir is a Scotch based, with Oud, Bergamot, Black Tea, and West Indies Bay Leaf. It came sort of hanging or floating on the ring, decorated with beautiful flowers like most others. Dell-Iris is Vodka based, with Pear, Orange, Ginger, and Dry Maraschino Cherry. It came with smoke coming from the base, like a thick morning mist. I didn’t manage to capture it, but we sure enjoyed the magic! They were both high quality and delicious, as all the others are.

But the one we had the most fun with, was the Coconino Rain. It is Rum based, with Mint, Watermelon, and Black Peppercorn. This one came with a long vine and hung from the ceiling! Everyone in the Tyme Bar was amazed, intrigued, and curious. A couple of them even came over and asked if they could take a picture! We loved every single one of them. It was swinging with joy and it was such a poise. It was sweet with coconut and rum, with a hint of watermelon. So good!

Now it is time for dessert! We got Crème Brûlée, and Churros. Thier Crème Brûlée was certainly special and yes, interesting. It is made with Ube, Coconut Mousse, and Pandan Tuile. The mousse was colored with ube, with the slight purple hue. Tuile was bright green from pandan. It was really tasty!

My niece was craving for churros, this was perfect timing! Churro, with Vanilla, and Dark Chocolate Sauce. It was perfectly fried, coated in delicious cinnamon sugar. The warm, melted chocolate was so good with churros, we were in dessert heaven after the cocktail heaven!

They have one gender-neutral bathroom in the back left, nice and bright, clean and roomy. As you can see, they have mirrors all around the wall, you can make sure to look posh in the Thyme Bar.

We had a massive fun time here at the Thyme Bar. All the cocktails were quite amazing, all carefully crafted, high quality, and super tasty. The food and desserts were great too, we enjoyed every bite. The service was friendly and efficient. We were well taken care of by our server. I am so glad we had the opportunity to try their Tasting Menu at the Thyme Bar. I would definitely recommend this experience for a special occasion.
